Emulsifiers!

Introduction

 In this unit in our class Food, we've been talking about different types of  things we can do with food and how they'll affect the outcome of it. We've been to places like Uncommon Ground, where they grow food on a rooftop and in these little boxes which helped us learn about how different growing conditions. We also watched a video about Ron Finley and how he started a garden in one of those small plots of land on the sidewalk. That taught us that you can start gardens really anywhere. We also did experiments replacing things in different food recipes and seeing how they were effected. We did one for emulsifiers, which included us replacing the regular egg in the recipe with apple sauce. Of course, it didn't turn out well for the apple sauce brownies, though. This leads into our project, which put us into groups and had us choose one of the following substitutions: the aforementioned emulsifiers, protein and leavening. 

Group

In out group, I chose to take the emulsifier substitution. One my other groupmates took the leavening substitution. The other one of my groupmates took the protein substitution. Both of their blogs are linked, so check out their experiments and what they did!  

Recipe substitution 

For my recipe substitution, I decided to do muffins and replace the emulsifier, the eggs, which yogurt. You might ask why I did, and I'd answer that it was was the nearest thing to me. Also, I was a bit curious on how it would be as an emulsifier. You can check out my slideshow for more details on it!

Conclusion 

In conclusion, the experiment I did showed me yogurt definitely worked as an emulsifier for muffins. I also learnt a lot in this unit as well! It was a fun unit and I'm glad we were able to experience it.
